Downtown Pflugerville Gets its First Brewery with Prost Alehouse

Prost Alehouse announced its soft opening on December 19, 2023, starting at 3 p.m. with $5 “Haus” beers through Thursday and Garbo’s Lobster ATX food truck onsite. The beer lineup features Haus beers brewed by the new brewer, Kevin Decoud including a Pilsner, Schwarzbier, Schwarz on Nitro, Bavarian IPA, Hefeweizen, and a Cherry Sour. Decoud has a formal brewing education and over 6 years of experience as head brewer at Southern Roots Brewing Co., Bare Arms Brewing, Balcones Brewing & Distilling, and Legal Draft Beer Co.

Soft opening hours:
  • Tues 12/19: 4-10 pm
  • Wed 12/20 and Thurs 12/21: 11 am-8 pm
  • Fri 12/22 and Sat 12/23: 11 am-midnight
  • Sun 12/24: 11 am – 6 pm
  • Mon 12/25: Closed for Christmas Holiday

We recently reached out to Prost Alehouse for a progress update and here is what they said, “[A] lot has been happening, good progress. We just hired a German master brewer we are very excited about. We hope to get our final inspection for plumbing and electrical this week then work on getting the brewhouse completed. Ideally, we are shooting for a soft opening in November.”

A new German-inspired brewpub is headed to downtown Pflugerville later this year. Prost Alehouse is opening in the historic downtown square occupying a two-story building that dates back to 1905. Husband and wife team Troy and Iven Dudley searched for several years to find the perfect location to build their vision of a destination, community-focused brewery when they settled on the perfect spot in Old Town Pflugerville. “We hope Prost Alehouse to be a catalyst and part of the revitalization of downtown Pflugerville and its action plan to Eat, Drink and Be Pfestive. Our goal is to build a community of family and pet-friendly, sports, motorsport and beer enthusiasts”

Working with OPA design studio, the team originally planned to have most of the public space on the first floor of the building; however, due to the pandemic, the plans were revamped to include more space for social distancing and improved airflow. As a result, the taproom will now be upstairs and the 20 bbl Criveller brewhouse will remain downstairs. An outdoor patio rounds out the kid-friendly and pet-friendly public space.

Husband and wife team Derek Starkey and Kiki Whatley joined the team as brewmasters, each with an extensive background in the Austin brewery scene. Starkey started his career at Flix Brewhouse and moved on Austin Beerworks, where he held multiple positions over the years. Whatley started her career at Independence Brewing Coand was most recently the Assistant Brewer at Flix Brewhouse, brewing award-winning beers. The duo plans to brew primarily classic German styles, “but we will have extensive research and development experimenting with styles from all over the world,” adds Starkey.

Chris Trevino, aka Horimana, created the crown and eagle logo for Prost, “Chris and I have known each other since high school, some of my friends were going to San Antonio for tattoos when he was there before Chris moved his shop (Perfection Tattoo) off of Guadalupe. We have traveled around together including Japan where he was doing work out of Three Tides Tattoo in Osaka. He is one of the world’s leading traditional Japanese artists. We are very honored to have Chris do our logo and know it will bring us good beer and fortune,” says Dudley.

So how will the team plan to open amid the pandemic? Dudley explains, “We plan to start with beer-to go sales and continue to monitor the latest guidelines from TABC as we get closer to opening. We will definitely have food options with our intention to partner with local businesses and food trucks. Our long term strategy is to design our operations with precautions in mind. We will implement a plan for COVID-19 preparedness, response, and control plans. For example, conducting daily health checks for employees, implementing policies and practices for face covering and social distancing, providing access to hand sanitizer, and improving the building’s ventilation system. We will also offer customers a touch-free experience, from a QR menu so customers can order directly from their phone and stay at their table, to touchless fixtures in the bathroom like touch-free sensor faucet, touchless hand soap dispenser, and touchless hand dryer.”
