Cibolo Creek Brewing is a family owned Brew Pub in the heart of Boerne, Texas. Their motto is printed right at the top of the menu, “Provide a welcoming environment for family, friends, neighbors and travelers alike.” They’re doing just that in what used to be the postman’s office at 448 S. Main Street in one of the quaintest, most picturesque little downtown areas in Texas. The whole family pitches in to produce their mainstay beers as well as rotating list of seasonal beers designed to be refreshing in everything from the freezing wintertime to the blazing hot Texas summers. They brew dark beers for the winter such as a porter and a stout, and they change to ales and IPAs for the summer.

Josh Mazour‘s family had been eyeing the old post office for years as a good place to establish a business. “We thought about making it a straight-up brewery, but we decided to make it a restaurant as well. And, we take making food just as seriously as making beer,” Josh said as he pointed to a menu with main dishes ranging from a burger on a potato roll to a pan-roasted Bandera quail.

Josh serves as the general manager for the brewery which was opened in August 2016 through the investment of his parents, Mick and Sonja Mazour. Josh used to work for American Canning, which is a company that cans beers for many breweries in the Austin area.

Josh’s brother-in-law, Ty Wolosin, is the head brewer. Ty, who is married to Josh’s sister, brewed for Namaste Brewing at Whipin on Interstate 35 in South Austin for two years prior to committing to this family project. He also works for his other family business, Windy Hill Foods, which is a sustainable meat and vegetable company, which pasture raises their livestock using no antibiotics or hormones. Both Josh and Ty lived in Austin for 15 years before moving to Boerne.

The atmosphere is perfect for the beer connoisseur with outdoor wood-bench seating facing Main Street, an indoor area and a beer garden in the back which adheres to traditional German style. Cibolo Brewing uses a seven-barrel system and believes in approachable beers, nothing too heavy or sour. And, the favorite thing for my boyfriend is there is no tipping allowed here. This way all guests get treated equally well.

Cibolo Creek Brewing serves five beers at the moment:

Postman Pale Ale – This worldwide popular style has hops to the nose with a flavor good and balanced of malts and hops, fruity notes that carry a light bitterness and fizzy heavy top.

Creekside IPA – An IPA with a strong hoppy kick and a clean dry finish, nicely balanced with a bit of caramel touch and richness that mellows out the twang of the hops, dark and deep golden color.

Weiss Hefeweizen – A highly original take on the German classic, dark orange in color with thick tall head and notes of banana, clove and orange, quite hazy with touches of coriander added and malty body.

Freethinker’s Pilsner – Light in color with a strong hop and spicy floral notes to the nose and taste, very crisp and refreshing.

Boerne Blonde – Ale Easy drinking blond ale with a lightly sweet malt body and crisp hop finish.
