Old Gregg Brewing Now Open in Pflugerville

After two years of planning and building, Old Gregg Brewing Company is now open in Pflugerville, Texas. Backed by FBR Management — the team behind Mean Eyed Cat and Star Bar — the brewery is led by brewing veterans Kirby Kirkconnell and Matt Couch.

Why it matters:

Old Gregg delivers bold, approachable beers alongside house-made hard seltzers, root beer, and “Dr. Gregg,” a playful twist on a classic Texas soda. A curated cocktail menu and frozen drinks round out the offerings, ensuring there’s something for everyone.

  • The beer: Served in 12-ounce pours with a focus on session styles. “We love session beers because we enjoy drinking, but we’re also responsible adults and parents,” Kirkconnell shares.
  • The name: Inspired by The Mighty Boosh sketch Here Comes Old Gregg. Kirkconnell adds, “We’re on Howard Lane, across from Old Gregg Road, and next to a pond. The name picked itself.”

  • The eats: Michelin-starred chef John Bates (Interstellar BBQ) brings Deft Pies, serving Chicago-style thin-crust pizzas daily (4-10 p.m.), and Yellow Bell Tacos, a weekend food truck offering tacos and more (noon-10 p.m.).

After two years of meticulous planning and construction, Old Gregg Brewing Company has opened its doors in Pflugerville, Texas. FBR Management, the restaurant group behind Mean Eyed Cat, Lavaca St Bar, and Star Bar, is behind the project, led by partners and brewing veterans Kirby Kirkconnell and Matt Couch.

The brewery offers a lineup of approachable, one-of-a-kind beers, house-made hard seltzers, root beer, and “Dr. Gregg,” a reimagined take on a classic Texas soda. Complemented by a curated cocktail menu and rotating frozen drinks, Old Gregg promises a something for everyone. Beers come in twelve ounce pours with a variety of session options, “we personally love session beers because we enjoy drinking but we are also responsible adults and parents,” offers Kirkconnell. “We will make beers of different strengths but session easy drinking is our default go to.”

And to clear things up, yes, the name is inspired by Here Comes Old Gregga comedy by The Mighty Boosh, “Fate stepped in and we couldn’t pass on the opportunity, we are on Howard lane (Howard Moon is one of the main characters) across from Old Gregg road, we are also on a pond, so it pretty much named itself,” explains Kirkconnell.

Housed in a 5,500-square-foot space, the brewery’s heart is a redesigned 10-barrel, three-vessel brewhouse — a custom upgrade of the two-vessel pilot system from Thirsty Planet Brewing. Newly Michelin-starred chef John Bates, known for his Interstellar BBQ success, joins the team with Deft Pies, his latest concept featuring artisanal pizzas inspired by Chicago-style thin crust. Available daily from 4 to 10 p.m., the pizzas are designed to pair perfectly with Old Gregg’s diverse drink menu. For weekend visitors, Bates’ food truck, Yellow Bell Tacos, will offer tacos, quesadillas, and kid-friendly options from noon to 10 p.m. Saturday and Sunday.

More about Kirkconnell and Couch

Kirkconnell, born on the island of Guanaja, Honduras, moved to the U.S. as a teen, served in the Navy and later co-founded Oasis Texas Brewing before co founding Solon Consulting. Couch, raised in rural Pennsylvania, found his passion for brewing after a near-death experience and trained in England’s traditional brewing culture. He has managed large-scale operations, also co founded Solon Consulting, which offers expert guidance to brewers worldwide. Together, as partners with FBR, Kirkconnell and Couch are excited to bring Old Gregg Brewing to the Pflugerville area, creating a welcoming community space for exceptional beverages and connections.
