Now Open | 3rd Level Brewing

A new brewery is now open to the small, but mighty, Round Rock brewing scene. 3rd Level Brewing is the brainchild of friends Clint Bradley and Ross Winner and is planning to open this spring. After starting a podcast 3 Beers In, the duo decided it was time to start brewing their own beer. Winner took the lead and started homebrewing, “we wanted to brew something different because the Austin landscape at the time was covered in IPAs,” he says. It turned out that what Winner was brewing ended up being darn good beer. As Winner was honing in the beers, Bradley was still at his corporate job where he was overworked and burned out. One day, Winner stated to Bradley that his dream was to wake up every day and brew beer and that was enough for the duo to “level up” from podcasting, to homebrewing, to deciding to open their own brewery – the journey ultimately inspired the name of the brewery.

3rd Level Brewing’s motto is “nerd out with what ales ya” reflecting the friends’ love of all things nerdy, “we want to brewery to be a reflection of ourselves with nerd culture incorporated in every aspect,” says Bradley. With beer names like Bad Wolf British brown ale, the brewery pays homage to all levels of nerds and plans to host a series of fun events from Dungeons and Dragons to video game tournaments.

Despite homebrewing to ultimately drink something other than IPAs, the brewery will still feature a variety of IPAs along with several other styles. including lagers. The 10BBL brewhouse will supply the 12-line tap wall featuring 6 core beers and the space will have both indoor and outdoor seating. 6 core beers:
Rocinante West Coast IPA – With Idaho 7 and Citra. Juicy with a bit of pine. 6% abv
Deadhorse West Coast IPA – Piney, resinous, and dank – 6.5% abv
Into the Hazy-verse East Coast IPA – Tones of pineapple and tropical fruit with a pillowy-soft mouthfeel. 6% abv
Bad Wolf British Brown Ale – Carmel and toffee with enough roast to keep it from being too sweet.  4.5% abv
Slim Chance American Light Lager – Clean, crisp light lager with lots of flavors. 4.3% abv

Dunkey Kong Munich Dunkel Lager – Like fresh bread covered in caramel. 5.2% abv

Initial Seasonals:
The Beer Without Fear Irish Red Ale – A deep, malty red with a touch of chocolate rye. 4.5% abv

Everlight Blonde Ale – Featuring Hallertau Blanc, Galaxy, and Nelson Sauvin hops. Touches of melon and bright tropical fruits backed by a distinct white wine character. 5.5% abv
